Mini Blueberry Lemon Muffins


Ingredients:
2 c. flour
2/3 c. sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 c. blueberries
1 Tbs. grated lemon peel
3/4 c. buttermilk
3 Tbs. butter, melted
1 Tbs. fresh lemon juice
cooking spray

Combine the dry ingredients in a large bowl. Whisk together. Add the blueberries and lemon peel. Toss. Add the wet ingredients and stir until just mixed (do not over mix). Spray the mini muffin tins with non stick cooking spray. Spoon the mixture into each muffin cup, about 3/4 of the way full.


Bake in a 400 degree preheated oven. Bake for 9 minutes. Remove from the pans immediately and let cool. Makes approximately 3 dozen.
