Oatmeal Cake with Chocolate Frosting

Ingredients:
1 1/4 c. quick-cooking oats
1 1/2 c. flour
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1 stick butter, softened
1 c. brown sugar
3/4 c. sugar
3 eggs
1 tsp. vanilla
Favorite chocolate frosting or store bought
Mini chocolate chips

Mix oats and 1 1/4 c. hot-boiling water. Let sit for 20 minutes. In another bowl, mix the flour, baking soda, baking powder and salt. Heat oven to 350 degrees. Spray a 13x9 pan with cooking spray. In an electric mixer, beat the butter, brown sugar and sugar at medium speed. Beat in the eggs and vanilla. On low speed, beat in the flour mixture until just combined. Beat in oatmeal. Pour into the pan and bake for 30-35 minutes. Let cool for a while and then frost. Top with mini chocolate chips.
