Veggie Stuffed Manicotti with homemade Alfredo


Ingredients:
1 1/2 c. mushroom, chopped
1 1/2 c. green pepper, chopped
2 tsp. garlic salt
2 tsp. parsley
1/2 c. shredded Mozzarella cheese
16 oz. cottage cheese (small curd)
1 box Manicotti, cooked according to package directions, and drained

Preheat the oven to 350 degrees. Mix the above ingredients (minus the noodles) in a bowl and set aside.When the noodles are done cooling down, using a spoon stuff the Manicotti with the cheese and vegetable mixture. Spray a 13 x 9 pan, or two round baking dishes with non stick cooking spray. Place the stuffed noodles on the bottom of the pan. Set aside to top with sauce.

Sauce Ingredients:
1/4 c. butter
3 gloves garlic, minced
1 c. milk
1 c. Parmesan (grated)

Melt 1 Tbs. butter in a small saucepan. Add the 3 cloves of garlic and saute until the garlic is slightly browned. Add the remaining butter and melt. Whisk in the milk and Parmesan cheese. Cook until the cheese melts and the sauce thickens slightly. Poor over the noodles. Bake for approximately 30 minutes. Let cool before serving.
