Chicken Caesar Salad Bites





Ingredients:
1 (5 oz.) container shredded Parmesan cheese
Parchment Paper
2 c. finely chopped cooked chicken
1/2 c. lettuce or green of choice, chopped
1/4 c. Caesar dressing
2 Tbs. fresh lime juice
fresh ground pepper
2 Tbs. grated Parmesan (give or take) for garnish

Preheat oven to 350 degrees. Spoon Parmesan cheese by rounded tsp., 1 inch apart onto parchment lined baking sheet. Bake for 10 minutes until the cheese is golden brown. Cool on baking sheets for 15 minutes. Meanwhile, in a small bowl combine the chicken, lettuce, Caesar dressing, lime juice and fresh pepper. Spoon (I used a 1/3 tsp. measuring spoon heaped over) the chicken mixture on top of the Parmesan crisps. Top with a small amount of grated Parmesan.
