Lemon Thyme Turkey



Ingredients:
1 (12-14 lb.) Turkey
1 large yellow onion, peeled and cut into eighths
1 lemon, quartered
8 sprigs of fresh thyme
1 stick melted butter
black pepper

Preheat your oven to 325 degrees. Remove the turkey from the wrapping and place the gizzards in water to save for the gravy later on. Wash the turkey thoroughly and make sure that they didn't miss any feathers. Place on a wire rack on top of a 13x9 inch pan. Stuff the inside of the bird with onion, lemon and fresh thyme. Stir in 2 Tbs. of fresh thyme into the melted butter. Brush the turkey with the butter. Put in the oven feet first, and bake for 3 1/2 hours. Remove from the oven and let sit for 20 minutes before carving.
