Lemon Bars


Ingredients:

3/4 c. flour
1/4 c. powdered sugar (plus extra for top)
1/4 c. toasted pine nuts
1/4 tsp. salt
2 Tbs. Imperial Margarine
2 Tbs. canola oil
3/4 c. sugar
2 Tbs. flour
1 1/2 tsp. grated lemon peel
1/2 c. fresh lemon juice (1 large lemon)
2 eggs
1 egg white

Preheat oven to 350 degrees. Spray an 8x8 baking pan with non stick cooking spray. In a food processor, pulse the pine nuts, salt, margarine, canola oil, 1/4 c. powdered sugar and 3/4 c. flour together until it forms a dough consistency. Spread evenly on the bottom of the sprayed pan and bake in the oven for 20 minutes, or until golden brown. Meanwhile, in a mixing bowl, whisk the 2 Tbs. flour, lemon peel, 3/4 c. sugar, lemon juice, and eggs together (about 2 minutes). Pour on top of the baked crust, and continue to cook for 20 more minutes. Remove from the oven and cool on a wire rack. Refrigerate for at least two hours before cutting and serving. Top with more powdered sugar. (Makes 16 bars, 3 WW points each.)
