Spinach Cheddar Balls


Ingredients:

6 Tbs. Imperial Margarine, melted and slightly cooled
3 large eggs
1 3/4 c. shredded reduced fat cheddar cheese
3/4 c. grated Parmesan cheese
2 Tbs. fresh chopped parsley
16 oz. frozen spinach, thawed and drained well
1 1/2 c. Panko breadcrumbs
2 Tbs. flour

Preheat oven to 350 degrees. In a large bowl, mix all of the ingredients together. Roll into 1 inch balls and place on a greased baking sheet. Bake for 8 minutes, flip over, and continue to bake for 7 more minutes. Let cool slightly on wire racks.

 (Makes 45 spinach balls, 1 WW point per spinach ball.)
