Strawberry Scones

                                 (Terrible picture, but man were they tasty!)

Ingredients:

2 c. flour
1/3 c. sugar
2 tsp. baking powder
1/4 tsp. salt
6 Tbs. chilled butter, cubed
1 1/2 c. chopped strawberries
1 egg, lightly beaten
1 tsp. vanilla
1/2 c. milk, 1% (plus extra for brushing)

Preheat oven to 400 degrees. Line a cookie sheet with parchment paper and set aside. In a large bowl whisk together the dry ingredients. Cut the butter with a pastry blender until the mixture looks like coarse crumbs. Gently fold in the blueberries. In a small bowl, combine the milk, egg and vanilla. Add to the flour mixture and stir until just incorporated.  Transfer the dough to a floured surface and kneed four or five times. Pat the dough into a 7 inch diameter circle, about 1 1/2 inch thick. Cut the circle in half, then cut each half into four pieces (making 8 pieces total). Place the scones on a baking sheet and brush with milk. Bake for 18-22 minutes. Transfer to a wire rack to cool fully.
