Zucchini Fries with Honey Mustard Dipping Sauce



Ingredients:

1/4 c. flour
1/4 tsp. salt
1/8 tsp. pepper
4 medium uncooked zucchini, ends trimmed, cut into 1 inch sticks
3 egg whites, lightly beaten
1 c. seasoned bread crumbs
1/2 c. light miracle whip
1 Tbs. honey
1 Tbs. Dijon mustard

Preheat the oven to 400 degrees. Combine the flour, salt and pepper in a shallow dish. Mix well with a fork to combine. Add the zucchini sticks and turn to coat. Place the egg whites and bread crumbs in a separate shallow dish. Add the zucchini to the egg whites and turn to coat. Transfer to the bread crumbs and turn to coat. Place the zucchini on prepared baking sheet and coat with cooking spray. Bake 40 minutes until golden brown. Whisk together the miracle whip, honey and mustard. Serve with the zucchini sticks.
