Skinny Mashed Sour Cream and Chive Potatoes


Ingredients:

3 red potatoes, peeled and cubed
1 Tbs. sour cream, light
1/8 c. milk, 1%
3 tsp. chives (I used freeze-dried)
10 sprays, Parkay spray butter
salt and pepper

Fill a small saucepan half way with water, and heat to high heat. When the water starts boiling, add the potatoes and reduce to medium heat. Boil for 5-7 minutes or until the potatoes are fork tender. Drain the potatoes and pour back into the saucepan. Add the sour cream and milk, and mash with a potato masher. Season with salt and pepper, and add 2 tsp. chives. Stir everything together well, and serve as two portions. Top with 5 butter sprays per portion and sprinkle the remaining teaspoon of chives.


(Makes 2 servings, 5 WW points per serving.)
