Funfetti Cookies


Funfetti is one of my favorite kind of birthday cake. I can't put my finger on if it's the bright sprinkles baked inside or the light fluffy texture. This cookie recipe is great because you can make the dough up days in advance and have them in the fridge ready to be baked.

Ingredients:

1 stick margarine, softened
3/4 c. sugar
Egg
1 tsp. vanilla
1 1/2 tsp. almond extract
1 1/2 c. flour
2 tsp. corn starch
3/4 tsp. baking soda
1 tsp. salt
3/4 c. Jimmies (colorful sprinkles)

In an electric mixer, combine the margarine, sugar, egg, vanilla and almond extract and salt together until you reach a smooth consistency. Add in the dry ingredients. The dough should be pretty thick, and stick to the paddle attachment. Then slowly add the sprinkles until they are well incorporated into the dough. Scoop the dough with a cookie scoop, forming 1-2 Tbs. of batter and place on a plate. Refrigerate for at least 2 hours, overnight works best (or up to a few days in the fridge until you have time to cook). Preheat the oven to 350 degrees. Place on an ungreased non stick baking sheet (or on parchment paper) and bake for 12 minutes. They may still seem uncooked but do not bake longer or touch them yet. Let them sit for 5 minutes on the baking sheet and then transfer to a wire rack to cool.
