2 1/2 Minute Microwave Scrambled Eggs


Lately I have not been hungry at all in the morning or while I've been at work. I grabbed some random items out of my refrigerator this morning since I didn't make myself lunch yesterday, and decided to just whip something up after I got there. This recipe is very easy to make. Warning though, it does make the air smell like scrambled eggs quite a bit (the whole office smelled like breakfast when I was done)....

Ingredients:

1/2 c. Egg Beaters, with yolk
2 Tbs. (or 1/8 cup) reduced fat shredded cheese (I used Sargento)
Pepper
Frank's Red Hot Sauce
Parkay spray butter

Spray the inside of a bowl or coffee mug with the butter spray. Pour in the Egg Beaters and microwave for one minute. Most of the eggs will still be liquid, but stir a few times. Place back in the microwave and cook for another minutes. Top with shredded cheese and hot sauce, and microwave for anywhere from 15 seconds to thirty seconds more. With a fork, whip the eggs to loosen them and make them more like scrambled eggs. Easy peasy!


(Makes one serving, 3 WW points per serving!)

Mug Chocolate Chip Cookie


Ingredients:

1 Tbs. margarine (Imperial)
1 Tbs. sugar
1 Tbs. brown sugar
1/2 tsp. vanilla
1/4 tsp. salt
1 egg yolk
3 Tbs. flour
1 Tbs. chocolate chips

Melt the margarine for 20 seconds in a coffee mug (with a napkin or paper towel on top). Stir in the sugars, vanilla and salt until well combined. Add the yolk and stir together. Mix in the flour until no white clumps are left. Stir in the chocolate chips. Cover again with the same napkin and microwave for 40 more seconds. It is THAT easy!


(Makes 1 Mug cookie, 9 WW points per mug.)

Gluten Free Chocolate Mug Cake


Ingredients:

2 Tbs. coconut flour
1 1/2 Tbs. cocoa powder (you could use dark cocoa powder also)
1/4 tsp. baking powder
1 Tbs. honey
1/4 c. almond milk, original or vanilla
1 egg
1 Tbs. chocolate chips, give or take

Mix all of the ingredients together minus the chocolate chips. Pour into a coffee mug. Sprinkle the top with chocolate chips. Microwave for 2 1/2 minutes. The cake looks like it is going to spill over, but if you use a standard coffee mug size, you will be fine. Add a few more chocolate chips, or serve as is. Be careful to let cool slightly!


(Makes 1 serving, 7 WW points per serving. *If you omit the chocolate chips, it becomes 5 WW points)

Banana Split Cupcakes in a Jar


These are made with the same ingredients as is in the Banana Split Cupcakes recipe. Here is how I put them together starting from the bottom and working to the top:

Chopped strawberries, crumbled banana cupcake, piped vanilla frosting, drizzled chocolate fudge or melted chocolate frosting, sprinkles, and topped with a Maraschino cherry!

Strawberry Sprinkle No Bake Cheesecakes

 
A friend of mine was having a Pure Romance party, and these cheesecakes in a jar turned out perfectly! All I did to add more of the theme was print out the logo on return address labels. Easy and inexpensive way to decorate the jar! This recipe was inspired and adapted from a recipe on one of my favorite blogs, "SprinkleBakes".

Ingredients:

2 c. graham cracker crumbs
1/2 c. sprinkles
1/2 tsp. salt
2 Tbs. sugar
1 stick margarine, melted

2 1/4 c. heavy cream
2 (8 oz.) pkg 1/3 less fat cream cheese, softened
1/2 c. Hershey's Strawberry syrup
2 Tbs. sugar

In a medium size bowl, combine the graham cracker through the margarine. Add about 2 Tbs. of the crust mixture to the bottom of each mason jar. To press the crust down, use the bottom of a shot glass and spin the mason jar as you press.

In an electric mixer, whip the heavy cream on high speed until soft peaks form. Add the remaining ingredients and mix until everything is well combined. (If you want a deeper red color, and more strawberry flavoring, add more of the syrup, or for just coloring, you can always add food dye.) Pipe the cheesecake filling on top of the crust in the mason jar. You can use a spoon and spoon the mixture in, but it tends to get a lot more messy and harder to even out the cheesecake. Top with sprinkles (or in my case, I added edible heart glitter to stick with the Pure Romance theme).

Pink Flamingo Tiramisu in a Jar

In 2006, my world became a little bit smaller when a woman named Sarah Jackson died. She was the mother of one of my best friends, and pretty much my second mother for ten years. I loved her and her family like they were my own. She was a great person, and had a gentle soul. When she passed away, it was decided that on Flag Day every year, we would take the time to celebrate her life. She was a lover of flamingo's. Her house used to be covered wall to wall with them. So in honor of Sarah on Flag Day, I created Pink Flamingo Tiramisu in a jar.


Ingredients:

16 oz. Mascarpone Cheese
4 Tbs. sugar
1 Tbs. coffee extract
3 c. Kahlua coffee, cooled, divided
36 Ladyfingers, each cut into thirds
1 can Reddi Wip
Block of semi-sweet chocolate
Bright pink food coloring




Combine the Mascarpone cheese, sugar, coffee extract, and two tablespoons of the coffee together. Stir in about 1/8 tsp. of pink gel food coloring. Spoon the cheese mixture into a piping bag and set aside. Pour the remaining coffee into a shallow dish. Soak three pieces of the ladyfingers in the coffee no more than 10 seconds (they will fall apart). Place them on the bottom of an 8 oz. mason or jelly jar. Pipe about 1 Tbs. of the mixture on top. Add another layer of soaked ladyfingers, another tablespoon of cheese mixture, shredded chocolate, another layer of ladyfingers, and top with whipped cream and more shaved chocolate. Repeat for the remaining 11 jars. Let set in the refrigerator for at least a half an hour before serving. Serve chilled or room temperature. I topped them with bright pink flamingo picks. 


Below are a few pictures of Sarah. There is also a picture that I took after a memorial service held  for her. We all let our pink balloons go at the same time, and the shape that the balloons started to form in the sky resembles a flamingo. It was pretty amazing.
