Ingredients:
2 sticks butter, softened
3/4 c. sugar
3/4 c. brown sugar
2 eggs
1 tsp. coffee extract
2 1/4 c. flour
1/3 c. cocoa powder
1 tsp. baking soda
1 tsp. salt
1 pkg. white chocolate chips
Preheat oven to 375 degrees. In an electric mixer, beat the butter and sugars until fluffy. Add the eggs one at a time, and then the extract. Add the flour, cocoa powder, baking soda and salt and slowly incorporate until everything is combined well. Stir in the white chips with a spatula. Grease a jellyroll pan with non stick cooking spray. Spread the batter out into the tray making an even layer on the top. bake for 15-20 minutes and cool fully on a wire rack before cutting. I cut into 3 dozen bars.
