Broccoli Egg Casserole





Ingredients:

3 c. raw chopped broccoli (chopped as small as you would like)
1 1/4 c. milk
3 eggs, beaten
1 tsp. salt
1/2 tsp. nutmeg
1 c. grated cheddar cheese, divided

Preheat the oven to 350 degrees. Pour milk into a small saucepan to heat through. Turn off as soon as the milk starts to boil. Meanwhile, mix the eggs with the salt and nutmeg. Pour the milk into the egg mixture and whisk until combined. Add 1/2 c. cheese and continue to whisk until the cheese is slightly melted. Pour into a greased baking dish (or quiche pan) and add the broccoli, then the 1/2 c. remaining cheese to the top. Bake for around 35-40 minutes or until a knife inserted comes out clean.
