Baked Eggs with Spinach and Gouda



Ingredients:
3 eggs
3 Tbs. milk
salt and pepper
5 oz. frozen, thawed and drained spinach (from 10oz. package)
1/2 c. smoked Gouda cheese
Chives for garnish

Preheat oven to 350 degrees. Spray three ramekins with non stick cooking spray. Place the spinach on the bottom of each ramekin. Add the egg (without breaking the yolk), milk, and season with salt and pepper. Top with the cheese and chives. Bake for five minutes. Turn the oven to broil and broil for five more minutes. (The yolk is supposed to be runny still when you break into it).

So good and very sophisticated looking. I got the idea from a post on the "For the Love of Cooking" blog. What is great it that you can use any ingredients and make it taste completely different!
