Mushroom and Zucchini Stuffed Chicken

Ingredients:
3 chicken breasts, cut in half and pounded 1/4 inch thin
1/2 c. diced Gouda cheese
1 tsp. salt
1 Tbs. garlic powder
1 zucchini, minced
1/2 c. mushrooms
1/2 tsp. pepper

Mix the Gouda, salt, garlic powder, zucchini, mushrooms and pepper together in a bowl. Add about 1/4 c. of the mixture in the center of each piece of chicken. Fold one side over the mixture, and then the other. Place seam side down in a large skillet. Continue for the other 5 pieces of chicken. Sprinkle with a small amount of garlic powder on top. Cook on medium high heat for about 10-12 minutes, flipping halfway through. Cut into a piece of chicken to make sure that they are fully cooked.
