Molasses Crinkles

Ingredients:
3/4 c. shortening
1 c. brown sugar
1 tsp. baking soda
1 tsp. ground cinnamon
1 tsp. ground ginger
1/2 tsp. salt
1 egg
1/4 c. molasses
2 1/4 c. flour
colored decorating sugar (I chose Halloween colors)

Preheat oven to 375 degrees. In an electric mixer, beat the shortening and brown sugar until well combined. Add the baking soda, cinnamon, ginger and salt. Mix together, and scrape down the sides of the bowl if you need to. Beat in the egg and molasses until combined. Slowly add the flour, until everything is mixed well together. Do not over mix. Roll the dough into 1 to 1 1/2 inch balls. Roll in the sugar, and place 1 1/2 to 2 inches apart (the cookies do not overly expand while cooking). Bake for 10 minutes, and transfer them to a wire rack to cool fully. Makes 30-40 cookies, depending on how large you make them.
