Parmesan-Pepper Shortbread Crackers


Ingredients:
1 c. flour
6 Tbs. butter, softened
1 1/3 c. grated Parmesan cheese
1/4 tsp. salt
1/2 tsp. black pepper
2 egg yolks

Put the flour in a small bowl, and using a pastry blender (or fork), cut the butter in until the mixture looks coarse. Add the Parmesan, salt and pepper and combine well. Add the egg yolks and with your hands, work into a dough. Divide the dough in half and roll each into a 7-inch log. Wrap in plastic wrap and refrigerate at least an hour, so that when you cut into it, it doesn't flatten. Each log when you cut it into slices will create 3 dozen crackers. Place on a baking sheet lined with parchment paper and bake on 400 degrees for 8-10 minutes. Cool on wire racks. You can store for up to 3-5 days.
