Creamed Spinach Cheddar Casserole


Ingredients:
3 10oz. packages frozen spinach, thawed
1 c. milk
1/4 c. flour
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. nutmeg
2 c. shredded sharp cheddar cheese
1 c. small curd cottage cheese

Preheat oven to 350 degrees. Spray a quiche pan with non stick cooking spray. Squeeze all of the water out of the thawed spinach using your hands. Combine the milk, flour, salt pepper and nutmeg in a saucepan. Cook over medium heat until thickened, whisking every once in a while, for about 2-4 minutes. Remove from the heat and stir in 1 cup of the cheddar cheese, cottage cheese and the spinach. Transfer the mixture into the quiche dish. Spread out evenly. Top with the other cup of cheese. Bake for 35-40 minutes. Let stand for five minutes before serving.
