Baked Sweet Potato Chips


Ingredients:

1 medium sweet potato, peeled and sliced 1/8 inch thick
1 Tbs. sea salt
1/8 c. vegetable oil

Preheat oven to 400 degrees. Spray two large baking sheets with non stick cooking spray. Layer the sweet potato slices in a single layer on the baking sheets. Brush each slice with the vegetable oil, and sprinkle with the sea salt ( do not over use the sea salt! A little bit goes a long way). Bake in the oven for 15-17 minutes until the edges turn golden brown. Let cool on wire racks to where they will become really crispy. (Makes 4 servings, 3 WW points per serving.)
