Skinny Oatmeal Chocolate Chip Cookies

Ingredients:

2 c. oats
1/2 c. wheat flour
1/2 c. flour
1 tsp. cinnamon
1/2 tsp. baking soda
1/2 tsp. salt
1/2 c. tahini
4 Tbs. butter, cubed
2/3 c. sugar
2/3 c. brown sugar
2 eggs
1 Tbs. vanilla
1 c. semisweet chocolate chips

Preheat oven to 350 degrees. Line baking sheets with parchment paper and set aside. Whisk the oats, flour, cinnamon, baking soda and salt in a medium sized bowl.  In an electric mixer, beat the tahini and butter together until well combined. Add the sugar, brown sugar, eggs and vanilla and beat until incorporated. Stir in the flour mixture by hand. Add the chocolate chips and stir in. Spray hands with non stick cooking spray and roll the dough into 1 Tbs. size balls. Place on baking sheets 2 inches apart. Flatten the tops with your fingers or a spatula. bake for 15-17 minutes until golden brown. Cool for two minutes on the pan, and then remove and place on wire racks to cool fully.

(Makes about 40 cookies, 3 WW points per cookie.)
