Baked Yam Fries




Ingredients:

Non stick cooking spray
2 large egg whites
1/4 c. seasoned breadcrumbs
1/2 tsp. black pepper
1 tsp. garlic salt
1 tsp. dried thyme leaves
1 large yam, peeled, sliced in half, sliced into quarters,
    and each quarter slice cut in half again

Preheat the oven to 400 degrees. Line a large baking sheet with tinfoil and spray with non stick cooking spray. Set aside. Meanwhile, whisk the breadcrumbs, pepper, salt, and thyme leaves in a shallow dish. In another shallow dish, whisk the egg whites until frothy. Coat each yam stick with the egg whites, roll into the breadcrumb mixture, and place on the prepared baking sheet. Repeat with the remaining slices of yam. Bake in the oven for around 30-35 minutes until the bottom is golden brown and the fries are crispy on the outside and tender on the inside.

To serve, I made a sauce of 1/4 c. light miracle whip, 2 Tbs. stone ground mustard, and 2 Tbs. dill pickle relish. It was great! Sweet and salty.
