Sweet Potato Casserole with Roasted Apples


Ingredients:

4 large sweet potatoes
1 Tbs. butter
1 Tbs. olive oil
2 Tbs. heavy cream
1/2 c. applesauce
2 tsp. grated fresh ginger
1 tsp. lemon zest
1 tsp. sea salt
1 tsp. fresh ground black pepper
2 Honey Crisp apples, peeled, cored and sliced
3 Tbs. brown sugar
1/4 c. sugar

Preheat the oven to 400 degrees. Grease a baking dish with non stick cooking spray and set aside. Prick the potatoes with a fork and place two at a time on a microwave safe plate. Microwave for 5-7 minutes, rotating the potato, until fork tender. Remove from the microwave and let cool before touching. Peel the potatoes, discarding the skins. Scoop the flesh into an electric mixer. Add 1 Tbs. butter, 1 Tbs. olive oil and the cream. Beat the mixture until smooth, for about 1-2 minutes. Mix in the applesauce, ginger, lemon zest, salt and pepper. Pour the mixture into the prepared dish and spread out evenly.


In a medium bowl, combine the apples and brown sugar together. Place in whatever pattern you wish on top of the casserole. Bake for 20 minutes in the oven. Sprinkle the top of the casserole with sugar and set the oven to broil. Broil for about 5 minutes, watching the apples to make sure that they don't burn, but that they turn golden brown.
