Strawberry White Chocolate Bread

 



Ingredients:

1 1/2 c. flour
1/2 tsp. baking soda
1 1/2 Tbs. sugar
1/4 tsp. salt
2 Tbs. margarine, melted
2 eggs
1/3 c. milk, 1%
2 c. chopped strawberries
1/2 c. white chocolate chips

Preheat the oven to 350 degrees. Mix the eggs, melted butter and milk in a small bowl. In a medium bowl, sift the flour, baking soda, sugar and salt. Add the liquid mixture to the dry. Add the strawberries and white chocolate chips and stir until the batter is well combined. Pour the batter into 5 greased mini loaf pans. Bake for about 35-40 minutes until a knife inserted in the center comes out clean. Remove from the pan and let cool fully before serving.


*I love this strawberry gadget! It is so much easier than trying to cut around the top with a knife. Or worse than that, is when people just cut the top third of the strawberry off. Seems like such a waste to me. This particular one is my great Aunt Jean's that I received after she passed away. I use it every time I have to deal with strawberries. I haven't been able to find the ones that you slide your thumb into, but I know they have the same version without the thumb part at Cook's Corner, and many different places. I highly suggest getting one!
