Spinach Mushroom Swiss Omelet Casserole



Ingredients:

1/4 c. butter, melted
25 eggs
2 c. milk
1/4 tsp. pepper
1 pack frozen spinach, thawed and drained
2 c. chopped mushrooms
1 1/2 c. cubed Swiss cheese

Spread the melted butter in a large baking dish. Preheat oven to 350 degrees. In a mixer, beat the eggs, milk and pepper together. Pour into the dish. Add the Swiss, mushrooms and spinach. Bake uncovered for 40-45 minutes. Let stand before cutting. Serves around fifteen.
