Confetti Veggie Egg Scramble

Ingredients:
2 red potatoes
1/2 green pepper (started changing color, so that is also the red you see in the picture)
1/2 red onion
4 pieces of bacon, cooked, drained but leave some of the grease in the pan
4 eggs
salt and pepper
1/2 c. cheddar cheese

Dice the first three ingredients into very small and even pieces. Add to the bacon grease and cook on medium heat and cover. Stir occasionally and cook for about 5 minutes, or until the potatoes are tender. In a small bowl, whisk the eggs. Add the eggs to the veggie mix and stir occasionally (about 3 minutes), until the eggs are fully cooked. Season with salt and pepper. Add the cheddar cheese and crumbled bacon and stir. When the cheese is melted, remove from the heat. I enjoy this dish with a small dash of Frank's hot sauce on top!
