I have made this recipe a few times now, but at the 2014 Halloween party they looked especially disgusting....in a good kind of way. The pictures above are from this year's party. The pictures below are from 2012.
Ingredients:
1 pkg. Puff Pastry, thawed according to directions
3 c. filling
1 egg, beaten
red/burgundy food coloring
toothpick
filling:
1/2 c. crumbled feta cheese
1 box of frozen spinach
1 c. cooked white rice
1 large yellow onion, chopped
2 Tbs. butter
Extra virgin olive oil
salt and pepper
Add the yellow onion and frozen spinach (that has been thawed and the water squeezed out) to a medium sauce pan and heat on medium heat. Add 2 Tbs. olive oil and season with salt and pepper. Cook until the onions become translucent. Remove from the heat and set aside. When cool, combine with the remaining filling ingredients.
Heat oven to 375 degrees. Line a 13x9 pan with parchment paper. Divide each sheet into6 strips (lengthwise). Lightly flour your counter and lay each strip next to one another, and press and seal between the strips. Spread the filling on the center of the puff pastry. Bring the dough up around the filling, pinching the sides together. Carefully lift and place in your pan, seam-side down, into the shape that you want. Brush with the beaten egg. With a toothpick dipped into food coloring, draw lines where you see creases in the puff pastry. Bake for 20-25 minutes. Let cool on a wire rack before serving.
