Eggs and Leftover Stuffing Hash
Ingredients:
2 c. leftover sausage stuffing
1 c. sliced mushrooms
2 Tbs. green onion
1 Tbs. butter
1/2 c. shredded cheddar cheese
4 eggs, over-easy
8 (1/2 slices) bacon
Melt butter in a medium sized skillet. Add the green onion and mushrooms. Cook until the mushrooms have become soft, and the onions are slightly caramelized. Add the leftover stuffing. Stir together and cook until the stuffing is hot. Add the shredded cheddar and stir in. Divide in two and scoop onto your plate. Top each plate with two over-easy eggs, and I served bacon on the side. The stuffing melts in your mouth, and when you break the egg yolk onto everything and let it run down, it has such a rich and creamy texture. This combination is delicious!
