Strawberry Pecan Chicken Pinwheels
Ingredients:
2 c. chopped strawberries
1/3-1/2 c. chopped pecans
Flatout pinwheel "bread"
Deli thin sliced rotisserie chicken lunch meat
Philadelphia fat free strawberry cream cheese
Combine the strawberries and pecans in a small bowl and set aside. Lay out a pinwheel roll. Spread 1/6 of the cream cheese container in a thin layer on top of the bread. Lay 6 slices of chicken out on top. Add 1/4 c. of the strawberry mixture at the very end of the pinwheel the whole width of the bread. Tuck the end closest to you over the strawberry mixture, tightly. Roll the pinwheel until you reach the other edge. Place in tinfoil and roll tightly. Repeat with the other 5 pinwheel sheets. Place them in the refrigerator over night or at least for a few hours, until they set slightly. Place about 8 picks the same distance apart into the roll. Slice between the picks, and snack on the ends if you aren't using them!
