PB Cupcakes with PB Ganache


Ingredients:

1 box Pillsbury classic yellow cake mix
1/3 c. creamy peanut butter
1 c. water
1/3 c. oil
3 eggs
1 c. Peanut butter chocolate morsels

Preheat the oven to 350 degrees. Mix the cake mix, oil, water, peanut butter and eggs together in a large bowl. Prepare 24 muffin tins with paper liners. Fill 2/3 of the way full and add 1 tsp. morsels on top. Bake for 19-21 minutes until the top is golden brown. Meanwhile, heat the remaining peanut butter chocolate chips morsels in a small pot. Add 1-2 Tbs. of canola oil and heat on medium low heat, stirring constantly. When the cupcakes are slightly cool, dip the tops into the melted chocolate to cover the top. Add shaved chocolate on top and let cool fully on a wire rack.
