Pumpkin Banana Bread


Ingredients:

1 3/4 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1 Tbs. cinnamon
1/2 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. ground cloves
3/4 c. brown sugar
1 c. pumpkin puree
2 large bananas, ripe and mashed
2 eggs
1/2 c. applesauce, natural
1 c. pecans (optional)

Preheat the oven to 350 degrees. Mix the flour, baking powder, baking soda, salt and spices in a bowl. Mix the sugar, pumpkin, bananas, eggs and applesauce in a large bowl. Slowly add the dry to the wet ingredients, stirring after each addition. Stir in the pecans. Pour into 4 mini loaf pans that are greased (or the baking paper pans). Bake for 32-37 minutes or until a toothpick inserted in the center comes out clean.
