Slow Cooker Rotisserie Chicken
Ingredients:
1 whole chicken
1/2 c. fat free chicken broth
1 Tbs. paprika
1 Tbs. onion powder
1 Tbs. garlic powder
2 bay leaves
Preheat the broiler. Mix the spices together and rub on the outside of the chicken. Place in a jelly roll pan lined with tinfoil and broil for 5 minutes until the skin gets slightly crispy and darkens. Place the chicken in the slow cooker. Add the chicken broth and bay leaves. Cook on low for 7-8 hours (or high for 4-5 hours).
(Makes 8 servings, 3 WW points per serving)
*Next time I make this recipe, I am going to try to put half of the seasonings under the skin on the top so that the spices can better penetrate the chicken. The skin and the broth was very flavorful and the entire house smelled like a rotisserie chicken. And even though the chicken was moist, you needed the broth to make it taste seasoned.
