Smashed Red Potatoes

 


Ingredients:

8 small red potatoes, cut into quarters and boiled with salt water
4 Tbs. margarine
1/4 c. almond milk, original (or 1% milk)
1 1/2 Tbs. chives, snipped
1 tsp. fresh cracked pepper
1 1/2 tsp. garlic salt



When the potatoes are fully cooked (check to make sure they are fork tender), drain them. While they are still hot, add the butter and start to mash. Add in the milk, pepper and salt and continue to mash until they are at your preferred consistency (I like mine still slightly chunky). Sprinkle with chives.
