Toad-In-A-Hole

 

I would be really surprised if a lot of people didn't have this dish growing up. It was one of the ways we used to make over easy eggs more interesting to eat, and you already had little "dunker" pieces of bread to eat with the yolk!


Ingredients:

2 pieces of bread (wheat bread shown)
2 eggs
Non stick spray

Heat a flat medium size skillet to medium heat. Using a biscuit cutter or circular drinking glass, punch out a circle out of the middle of each piece of bread (if using a drinking glass, you might want to spray the edges with non stick cooking spray). Spray the skillet with non stick cooking spray. Place both pieces of bread, and the circles, on top of the skillet. Crack the egg open and pour into the middle of each circle. Season the tops with salt and pepper. After about 2- 2 1/2 minutes, flip the egg over with a spatula to cook on the other side.


(Depending on the bread used, this is 5-6 WW points.)
