Diet Coke Pot Roast


Diet Coke anyone? This recipe makes some sweet and tangy pot roast between the combination of balsamic, honey and Diet Coke of all things! I know it sounds strange....but you will be very surprised at the outcome!

Ingredients:

3-4 lb. boneless beef round roast
1 (8 oz.) can Diet Coke
1 Tbs. Worcestershire sauce
1/2 c. balsamic vinegar
1 Tbs. soy sauce
1 Tbs. honey
4 cloves garlic, sliced
2 large carrots, chopped
4 small red potatoes, quartered
1 bag (10 oz.) pear onions, boiled and skins peeled off


Place the beef on the bottom of the slow cooker. Add the vegetables and scatter on top of the meat randomly. In a small bowl or measuring cup, mix the Coke, Worcestershire, balsamic, soy sauce and honey together. Pour on top of the meat and vegetables. Cook for 6 hours on low. Pour the cooking liquid on top of the meat and vegetables and cook for another hour on high. Remove the meat and slice. Place back in the liquid until ready to serve.


This dish sort of gives you two great things in one. You get a tasty pot roast with tender vegetables on one hand, and depending on how much liquid you use, you also get a jar of beef broth to use in a recipes later on!
