Tropical Ham Glaze

Ingredients:
2 c. mango juice
1/4 c. apricot preserves
1 1/2 Tbs. minced peeled fresh ginger
1 Tbs. grated lemon peel
1 Tbs. grated lime peel
2 tsp. ground coriander
2 tsp. fresh lime juice

Combine ingredients in a saucepan and bring to a simmer. Cook until slightly thickened, about 15 minutes. When the ham has about 25 minutes left, add the glaze and return to the oven to cook. Let the ham set 15 minutes before slicing and serving.
