Ingredients:
2 c. cubed pork tenderloin, marinated in lemon and fresh Parsley
1 red pepper, diced
1 tomato, diced
2 green onions, minced
Fresh grated Parmesan
Tortilla shells
Fresh Parsley and Cilantro
Italian Dressing
Cook the pork tenderloin in a skillet on medium heat. After about five minutes of cooking and stirring occasionally, add the red pepper and green onion. Continue to cook for about 3-5 more minutes. Cut into a piece of pork to make sure it is cooked all the way through and not pink on the inside. Add the pork mixture to your tortilla shells. Top with the tomatoes, fresh herbs, Italian dressing and top with Parmesan cheese.
