Cheesy Potato Casserole
Ingredients:
6 medium size potatoes, sliced (I used Idaho)
2 Tbs. butter, melted
1 tsp. salt
1 tsp. pepper
1 tsp. garlic powder
3 oz. shredded low fat cheddar cheese
1 c. 1% milk
pinch of nutmeg
2 tsp. dried thyme
Preheat your oven to 425 degrees. Spray a 13x9 pan with non stick cooking spray and set aside. In a large bowl, combine the melted butter, salt, pepper, garlic powder and potatoes together. Evenly spread half of the potatoes on the bottom of the pan. Top with half of the cheese, and then the remaining potato mixture goes on top. In a small saucepan, combine the milk, thyme and nutmeg, and heat to a boil. Pour on top of the potatoes. Top the potatoes with the remaining cheese. bake for 45 minutes uncovered. (Makes 6 slices, 4 WW points per slice.)
