Oven-Baked Crispy Chicken




Ingredients:
2 eggs
1/4 c. 1% milk
1 tsp. Sriracha sauce
3 pieces of wheat bread, made into crumbs in food processor
3/4 c. grated Parmesan cheese
1/2 tsp. chile powder
Pam cooking spray
3 chicken breasts, cut in half lengthwise (not butterflied)

Preheat oven to 375 degrees. Place a wire rack in a jelly-roll pan and spray with Pam cooking spray. Set aside. In a medium shallow bowl, whisk the eggs, milk and Sriracha. In another bowl, combine bread crumbs, cheese and chile powder. Dip one piece of chicken in the egg mixture, then into the bread crumbs. Place on the wire rack. Repeat for the remaining pieces of chicken. Spray the top of the chicken pieces with Pam cooking spray. Bake in the oven undisturbed for 30-35 minutes, until the chicken is juicy and no longer pink.
