Ingredients:
1 pkg. Pillsbury strawberry cake mix
1/2 c. vegetable oil
2 eggs
1/4 sugar
white frosting (store bought or home made)
Preheat the oven to 350 degrees. In a large bowl, mix the cake mix, oil and eggs together with a spatula until a soft and shiny dough forms ( it will look oily, and it is supposed to). Shape into 1 inch balls and roll in the 1/4 c. granulated sugar. Place onto a cookie sheet lined with parchment paper and bake for 8 minutes. Let cool fully on a wire rack. Spread about 1-1 1/2 tsp. frosting on the bottom of one cookie. Add another cookie to make a sandwich. Repeat for the remaining cookies (if you are left with one...oh shux I guess you should eat the evidence!).
