Strawberry Sprinkle No Bake Cheesecakes

 
A friend of mine was having a Pure Romance party, and these cheesecakes in a jar turned out perfectly! All I did to add more of the theme was print out the logo on return address labels. Easy and inexpensive way to decorate the jar! This recipe was inspired and adapted from a recipe on one of my favorite blogs, "SprinkleBakes".

Ingredients:

2 c. graham cracker crumbs
1/2 c. sprinkles
1/2 tsp. salt
2 Tbs. sugar
1 stick margarine, melted

2 1/4 c. heavy cream
2 (8 oz.) pkg 1/3 less fat cream cheese, softened
1/2 c. Hershey's Strawberry syrup
2 Tbs. sugar

In a medium size bowl, combine the graham cracker through the margarine. Add about 2 Tbs. of the crust mixture to the bottom of each mason jar. To press the crust down, use the bottom of a shot glass and spin the mason jar as you press.

In an electric mixer, whip the heavy cream on high speed until soft peaks form. Add the remaining ingredients and mix until everything is well combined. (If you want a deeper red color, and more strawberry flavoring, add more of the syrup, or for just coloring, you can always add food dye.) Pipe the cheesecake filling on top of the crust in the mason jar. You can use a spoon and spoon the mixture in, but it tends to get a lot more messy and harder to even out the cheesecake. Top with sprinkles (or in my case, I added edible heart glitter to stick with the Pure Romance theme).
