Apple Pie Chia Pudding


The natural sweetness from the dates, mixed in with the tart green apple, makes this a perfectly balanced chia pudding for a mid day snack or fulfilling breakfast!

Ingredients:

1 green apple, peeled, cored and chopped
2 pitted dates
3 Tbs. chia seeds
1/2 tsp. cinnamon
1/4 tsp. ground ginger
1 tsp. vanilla
1 c. almond milk


Add the milk, apple, dates, cinnamon, ginger and vanilla to a blender, cover, and liquefy.


Stir in the chia seeds by hand. Pour into 4 serving dishes. Refrigerate overnight. I topped mine with extra chia seeds and some chopped date.

Easy Cheesecake Mousse with Fresh Fruit


Sometimes for dessert it is nice to get away from the heavy dense cakes and frosted cupcakes and you just crave something with a silky smooth texture. Many mousse and custards involve tedious steps that you don't want to have to deal with and you just want something that can be thrown together in five minutes. This recipe is perfect for that. It involves three main ingredients, and then can be decorated and topped with whatever else you are craving at the moment.

Ingredients:

8 oz. Cool Whip, Lite
1 pkg. Jell-O Cheesecake Pudding, Sugar and Fat Free
2 c. milk, 1%

Mix the pudding and milk together according to packages until there are no lumps left. Let refrigerate for at least five minutes so that the pudding can set. Add half of the Cool Whip and gently fold in with a spatula. Add the remaining half and continue to gently fold until everything is well incorporated. And there you have it, you are done with the cheesecake mousse!

We had these for dessert at my moms house, and she had some white and milk chocolate dessert cups. I spooned about 1/4 cup of the mousse into each chocolate cup and then topped with raspberries, blueberries and white chocolate crisp pearls!

White Chia Coconut Pineapple Pudding


Ingredients:

2/3 c. white chia seeds (can use regular)
1 1/3 c. coconut milk, light
1 1/2 c. chopped pineapple
1/4 c. toasted coconut flakes (unsweetened)

Combine the chia seeds and the coconut milk in a small bowl and stir together. Let sit for 5 minutes and stir together again (should be a pudding consistency). Divide into two serving dishes. Top with 1 c. chopped pineapple and approximately 2 Tbs. of toasted coconut. Refrigerate until ready to serve.

(Makes 2 decent sized mason jar servings, 12 WW points per serving. It seems like a LOT of points, but this recipe is VERY filling.)

Blueberry Pie Chia Pudding


Ingredients:

2/3 c. chia seeds
1 1/3 c. vanilla soy milk
1 Tbs. dark brown sugar
1 tsp. pumpkin pie spice
1 c. blueberries, divided

Mix the above ingredients together in a medium size bowl, stirring every minute or so for 10 minutes to let the milk soak in. Divide evenly among 4 bowls or jars. Top each with 1/4 c. more soy milk, a sprinkle of brown sugar, and a few raw chia seeds. Refrigerate for a few hours or overnight.

PB Chia Breakfast Pudding



Ingredients:

3 c. milk, 1%
1 c. chia seeds
1 1/2 Tbs. PB2
1 tsp. cinnamon
4 tsp. honey
1 tsp. brown sugar
Melted peanut butter on top

Combine all of the above ingredients minus the melted peanut butter. Stir occasionally for 10 minutes until the chia seeds start to expand. Divide into four mason jars or containers and drizzle with melted peanut butter. Refrigerate for at least 6 hours or over night.


(Makes 4 servings, 8 WW points per serving. This serving is a huge amount, so to cut WW points in half, you can make 8 servings for 4 points each, and eat with fresh fruit on the side.)

No Bake Strawberry Cheesecake Pudding


Ingredients:

2 c. chopped strawberries, plus 12 slices
4 graham cracker boards, crushed
1 box sugar free fat free Jell-O Cheesecake pudding mix
2 c. milk, 1%

Mix the pudding with the milk and whisk until the mix dissolves. Refrigerate for 10 minutes until the pudding is set. In 6 dessert bowls, add the crushed graham cracker at the bottom. Add a layer of chopped strawberries. Spoon some of the pudding cheesecake on top of the strawberries. Top with two slices of strawberries and refrigerate for at least ten minutes again so that the pudding chills.

Pistachio Pudding Bars


Ingredients:

2 c. graham cracker crumbs
2 Tbs. sugar
1 stick margarine, melted
4 c. milk, 1%
2 pkg. instant pistachio pudding mix
1(8 oz.) container Fat Free Cool Whip
1/2 c. chopped pistachios

Preheat oven to 350 degrees. Coat a 13x9 pan with cooking spray. Mix the graham cracker crumbs, sugar and butter together in a medium sized bowl. Press the mixture into the bottom of the pan evenly and bake for 8 minutes. Take them out of the oven and allow to cool to room temperature. Meanwhile, combine the pudding mix and milk and whisk until everything is combined well. Refrigerate at least 10-15 minutes until the pudding has set. Spread evenly on top of the crust. Then spread the cool whip on top of the pudding and sprinkle the top with chopped pistachios. Refrigerate for a few hours or overnight before cutting into squares.

(Makes 18 squares, 4 WW points per square.)

S'Mores Pudding Parfaits




Ingredients:

1 pkg. Jell-o Cook & Serve Sugar Free/ Fat Free Chocolate Pudding (prepared as directed)
1 c. crushed graham crackers
1/2 c. Marshmallows
Kitchen Torch

Fill 1/4 of the bottom of two clear serving cups with the crushed graham crackers. Add pudding on top of the crackers until the cups are half way full. Add another layer of crushed graham crackers, and finish with the chocolate pudding. Add the mini marshmallows on top, and using a kitchen torch, caramelize the tops of the marshmallows. Serve warm. It tastes just like a big S'More! All you have to do now is close your eyes and picture a bonfire! (Makes 2 servings, 5 WW points each.)

Banana Cream Pie Pudding For Two


Ingredients:
3.4 oz. box JELL-O Banana Cream instant pudding mix
2 c. 1% Milk
1 banana, sliced
3 graham cracker boards, crushed into crumbs

Prepare the pudding as directed by whisking the milk into the dry mix. Place 1/4 of the crushed graham cracker on the bottom of four serving dishes. Divide the sliced banana into four servings and place on top of the crumbs (save four slices). Before the pudding sets, pour the pudding onto the top of the bananas. Top each dish with a slice of banana. Let sit in the refrigerator for at least 10 minutes so that everything chills and sets together. (serves 4, 4 WW points)
