Chocolate Marshmallow Cookies

Ingredients:

2 c. flour
1 tsp baking soda
3/4 c. brown sugar
3/4 c. granulated sugar
1 tsp. vanilla
1/3 c. baking cocoa
2 eggs
2 sticks butter
1 tsp. salt
12 Marshmallows cut in half

 Mix the eggs, sugars, butter and vanilla in an electric mixer. Add the dry ingredients. Refrigerate the dough for 20-30 minutes. Preheat the oven to 350 degrees. Take the dough out (it will still be slightly sticky). Spray your hands with cooking spray. Take 2 tbs. of the dough in your hand and form into a patty. Place the Marshmallow half on the middle of the patty and bring the sides up and make sure the cookie dough seals the Marshmallow inside. Place 1 1/2 inches apart on a wax paper lined cookie sheet. Take a sharp knife and on the very middle of the cookie, poke a hole down through the cookie until you can see the Marshmallow. Bake the cookies for 10-12 minutes. (The hole in the top is so that the Marshmallow has some room to expand and doesn't burst out the side or bottom of the cookie dough while baking.) Let cool and remove from the wax paper. The result is a gooey center and a soft, chocolaty exterior.
