Apple White Cheddar Quesadilla with Avocado Apple Salsa


Ingredients:
4 6-inch tortilla shells
1 1/2 c. shredded white cheddar cheese (I used my favorite Australian White Cheddar)
2 green onion, divided by the white part and the green part
2 apples, peeled and finely chopped, divided in half
1 avocado, chopped
1 tsp. lemon juice

Spray a non stick skillet with cooking spray. Heat to medium low heat. Add 1/4 of the cheese on top of the tortilla, topped with 1/4 of the apple mixture and 1/2 of the white part of the onions. When the cheese looks like it is starting to melt, add another 1/4 of the cheese mixture, another tortilla shell, and with a spatula flip over to the other side. When all of the cheese is melted, remove from heat and set aside. Repeat this to make the second quesadilla. Set the second one aside. Combine the rest of the cut apple, avocado, and the green part of the onion. Add the lemon juice and stir. Pour into your serving dish. Cut each quesadilla into 4 pieces and add to your serving platter. Spoon some of the salsa on your quesadilla right before you eat it. This recipe is very fresh, and the salty cheese and sour apple goes very well together.
