Breakfast Potatoes with a Twist

Ingredients:
6 small red potatoes, cut into small pieces
1/2 green pepper, chopped
1 small white onion, chopped
6 Maple Breakfast sausage links
2 pieces of deli Ham, sliced into small slivers
1 tsp. pepper
1 1/2 tsp. garlic salt
1/4 c. shredded Swiss cheese
2 eggs, cooked over-easy

Heat a large saucepan at medium heat, with about 2 Tbs. of vegetable oil. Add the chopped potatoes, green pepper, white onion, and 1 tsp. garlic salt. Stir and let cook for about 5 minutes. Meanwhile, in a small saucepan, fill with water and heat to high until the water starts boiling. Add the sausage and cook for about 2 minutes, or until the sausage is cooked. Take the sausage out of the pan and leave to the side to cool down.  When cool enough, cut into bite size pieces. When the vegetables are almost fully cooked (the potatoes are fork tender), add the deli ham and sausage. Stir together and let cook for another minute to try and brown the sausage slightly. Add the remaining garlic salt and pepper, stir to combine. Top with Swiss cheese and stir throughout. Serve with 2 eggs, over-easy on top (or scrambled if you prefer).
