Tzatziki (Greek Dip)

Ingredients:
3 Tbs. onion
1 garlic clove
1 c. cucumber
2 c. thick, plain yogurt
1/2 tsp. salt
1/4 tsp. pepper
3 Tbs. fresh dill
3 Tbs. fresh mint

Roughly chop the onions and fresh herbs. Peel the skin off of the garlic. Peel the cucumber, remove the seeds and roughly chop. Puree the garlic and onions in a food processor. Add the cucumber and herbs and pulse to combine. Strain the mixture. Add the strained cucumber mixture to the yogurt and season with salt and pepper. Stir until everything is combined.
