Mini Chocolate Chip Muffins


Ingredients:
2 c. flour
1/2 c. sugar
1 Tbs. baking powder
1/2 tsp. salt
1 egg
3/4 c. milk
1/3 c. vegetable oil
1 c. mini chocolate chips

Preheat the oven to 400 degrees. Spray mini muffin tins with non stick cooking spray and set aside. Combine the first four ingredients in a large bowl. In another small bowl, beat the egg milk and vegetable oil together. Add to the dry ingredients and mix until everything is well combined (do not over mix). Fill each muffin cup 3/4 of the way full. Bake for 9 minutes. Immediately transfer to a wire rack.
