Apple Brown Sugar Muffins
Ingredients:
1 1/4 c. sugar
1/2 c. brown sugar, plus extra to top the muffins
2 eggs
3/4 c. oil
1 Tablespoon vanilla
3 c. flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
3 cups peeled, cored, and grated (around 2 large apples)
Preheat oven to 350 degrees. Line the muffin pan with paper liners. Whisk the sugar, eggs, oil and vanilla together with a whisk. Add the dry ingredients and mix with your hands (or a spatula). Add the grated apples and mix together. Place about 1/4 c. in each muffin liner (3/4 of the way full). Sprinkle with brown sugar on top. Bake for around 20-23 minutes or until a toothpick comes out clean. Makes around 12-18 muffins.
