Pepper Scramble Po' Boy

Ingredients:
4 eggs
1 small Red pepper, diced
1 small yellow pepper, diced
2 green onions, minced
salt and pepper
1/2 c. shredded Cheddar cheese
4 hoagie or fresh hot dog buns
Spreadable butter (I used "Fleischmann")

Heat a medium sized skillet over medium heat (I used the same pan that I cooked some bacon in). If you aren't cooking bacon as a side dish, you will need to spray the pan with non stick cooking spray. Add the green onion and peppers to the hot pan. Crack the four eggs into a small bowl and whisk with a fork until the egg is mixed well. Season with salt and pepper. Pour the eggs on top of the peppers and continuously stir until the eggs are fully cooked through. Add the shredded cheese and stir until the cheese is melted. Butter the inside of your hoagie buns. Spoon the egg mixture into your buns and season again with salt and pepper if needed.
