Banana Pecan Bread


Ingredients:
2 eggs
2 c. sugar
1/2 c. vegetable oil
3 ripe bananas
2 1/4 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 c. chopped pecans (plus 1/3 c. to top the loaves with)


Preheat oven to 375 degrees. Combine all of the ingredients together in an electric mixer except for the 1/3 c. of pecans. Spray four mini bread tins with non stick cooking spray. Divide the batter among them evenly and sprinkle each with the chopped pecans. Bake in the oven for 35-37 minutes. Remove the bread from the pans and let cool on a wire rack.

*You can also use mini loaf paper baking cups that do not need spraying, and cook them for the same amount of time.
